Coconut ‘Muffin’
1 Tablespoon Coconut Flour
1 Tablespoon Almond Meal or Flour
1/2 Teaspoon Baking Powder
2 Tablespoons of melted Coconut Oil
1 Tablespoon of Water or Club Soda
1 Egg
1 serving no-calorie sweetener to taste (monk fruit or stevia preferred)
Other flavorings (optional) – vanilla, cinnamon, etc
Mix all ingredients in a coffee mug. Put the mug in the microwave for ~90 secs. When done, remove mug with pot holder, and turn it upside-down to get muffin out.
